The main ingredients are handmade pasta and a unique soft cheese made from goat\u2019s and sheep\u2019s milk, still produced using traditional methods. Small in size yet outstanding in flavour, it is the smallest of its kind, reaching up to 7 cm and resembling a juvenile shrimp. It has a vivid orange colour, a long rostrum, electric-blue markings, and a mildly sweet taste.
